A 'dream fell perfectly into place': New eatery to replace Beefs in Baxter Village

Diners are getting a new restaurant in Baxter, with the addition of Killingtons Restaurant & Pub in the former Beef ‘O’ Brady’s space on Market Street.

The Huntersville, N.C.-based Killingtons recently announced the expansion into their second site. Killingtons will open at 940 Market St., suite 110 within the next few months, the owners said.

“We are in the process, now that we have signed the lease on the place, of putting all those processes in motion,” said Greg Roderick, co-owner with wife Shannon.

The aim is for a spring opening. The Rodericks see potential in the growing Fort Mill area.

“We are thrilled to bring Killingtons to this thriving location in South Carolina and become part of the Fort Mill community,” Shannon Roderick said. “We feel it is the perfect fit for our brand and provides us with abundant opportunity for community involvement, which is very important to our business values.”

While Killingtons sounds like it could be a cousin of Beef ‘O’ Brady’s, the cuisine is described as “American fusion.” Popular dishes at the existing location include bacon encrusted meatloaf, barbecue salmon, Gold Rush chicken wings, a blackbean burger. It’s a gastro-pub inspired menu. They also have handcrafted cocktails.

Chef Brian Bruce will oversee the kitchen. The Rodericks and Bruce have more than 40 combined years in the restaurant industry. Greg Roderick co-owned Charlotte’s Tavern on the Tracks for 15 years. Bruce has been with Killingtons for a decade.

“Whether you’re vegan, gluten-free, carnivorous, vegetarian or just want a great plate of wings, Killingtons wants to serve you great food, awesome customer service and make you part of our family,” he said.

The growing community in Fort Mill made Baxter a logical choice for the ownership team.

“Our team has always wanted to expand the Killingtons concept and when this location became available, the dream fell perfectly into place,” Greg Roderick said.

Knowing how well the community supported Beef ‘O’ Brady’s certainly helped.

“We’re looking forward to it,” Greg Roderick said. “We’re excited about the community down there, and the growth in the area. Hopefully we’ll be down there at least as long as Beef ‘O’ Brady’s was. They had a great run.”

Shannon Roderick believes folks will latch onto the new concept, once they give it a try.

“The Killingtons motto is ‘Come in as strangers and leave as friends,’” she said. “We are looking forward to making a lot of new friends in Fort Mill.”
